The Story Behind the Recipe:
I have made this recipe for holidays and many special occasions. My family enjoys eating the Mandel Bread and I enjoy making it. My mother used to make this recipe for Rosh Hashanah every year. We just called it an apple cake We were the only Jewish family on our block. My mother used to make this cake for our neighbors for Christmas each year and deliver it to each personally. As a result, it became known as Jewish apple cake. It's one of my family's favorite recipes as we celebrate the Jewish New Year every year as it brings back fond memories of my mother, who passed away several years ago and who suffered from Alzheimer's disease many years before that.
Recipe:
Ingredients:
3 cups flour 2 cups sugar
I cup oil ¼ cup orange juice
3 tsp baking powder 2 ½ tsp vanilla
4 eggs 2 cups sliced apples
Instructions:
Sift together dry ingredients; add eggs one at a time. Batter will be thick, which is fine. Place in a greased large cake pan with a hole in the middle. Add half the batter, then the apples, then top with the rest of the batter and apples. Sprinkle with sugar and cinnamon. Bake at 350 degrees for 55 to 60 minutes.
