The Story Behind the Recipe:
My grandmother, who lived in Syracuse, New York used to make this every year for us and it was a family favorite. She was from the "old country"- Germany- and never measured anything. We sat down with her and tried to convert into measurements what she used in her recipes. I have her original recipe that we converted but I could never make the crumb topping work! About 25 years ago, I found this recipe that I have been using ever since and it is very close to my grandmother's. It has been a total hit with my family.
Recipe:
Ingredients:
2 c all-purpose pre-sifted flour
1 T baking powder
½ t salt
¾ c sugar
6 T margarine
2 eggs
1 t vanilla
½ parve unsweetened milk substitute
15 small prune plums cut in ½ and pits removed
TOPPING:
¾ c sugar
½ t ground cinnamon
½ T all-purpose flour
2T margarine
Instructions:
Mix flour, baking powder, salt, and sugar into a medium bowl. Cut in shortening. Break eggs into a 1C measure. Add vanilla to eggs, then fill cup with milk, mix. Pour mixture into bowl and mix with mixer.
Spread batter in a greased 13 x 9 x 2 in baking pan. Arrange cut plums on top of batter, cut side down.
To prepare topping, combine sugar, cinnamon, flour and margarine in a small bowl; mix with fingers until mixture is crumbly. Sprinkle topping over plums.
Bake in a preheated 350 degree oven for 40 minutes or more until nicely browned and toothpick comes out clean.
Makes about 12 - 16 servings.
