The Story Behind the Recipe:
This recipe was made by my Mom as long as I can remember. It was always a favorite of mine and my brothers. Today I make it for my four married kids and 11 grandkids. It continues to be asked for over and over again.
Recipe:
Ingredients:
4 1/2 cups unsifted flour. 1T. Baking powder
3/4 c. Sugar 1/2 t. salt
1/2 c. oil 1 teas. orange rind
1/4 c. melted butter. 1 teas vanilla
1/4 c. orange juice 4 beaten eggs (save one eggwhite for top)
Filling: 1-1 1/2 c. Chopped walnuts. Top: 1 egg white
1 1/2 c. Golden raisins. 1/4 c. sugar
1 t. Cinnamon 1 t. cinnamon
1/4 c. Sugar
Any flavor jam
Instructions:
Sift this together 1/2 cups unsifted flour, 1T. Baking powder, 3/4 c. Sugar,1/2 t. salt in a large bowl.
Make a well in the center and add: 1/2 c. oil,1 teas. orange rind,1/4 c. melted butter, 1 teas vanilla, 1/4 c. orange juice and 4 beaten eggs (save one egg white for top).
Add this to dry ingredients. Kneed the dough until well blended.
Chill for several hours. Divide dough into thirds (for larger bisquits) or fourths (for smaller bisquits).
Roll out between two pieces of waxed paper (wet counter to keep bottom paper steady on counter) and spread with jelly or preserves (your choice, apricot, raspberry, etc.) Top with mixture of nuts, sugar, cinnamon, and raisins. Roll up into jelly roll and brush with egg white. Sprinkle with sugar. Cut into pieces (around 1 inch or so wide). Place on greased cookie sheet. Bake at 350 degrees for 20-25 minutes.
Remove from baking sheet and cool on rack or wax paper.
